1 egg yolk
1/3 cup sugar
2 tsps instant coffee
2 cups milk
3 Tbsps quick-cooking tapioca
1/2 tsp vanilla
1 stiffly beaten egg white
1/2 cup whipping cream
1. In a saucepan combine egg yolk, sugar, coffee, milk, and tapioca. Bring to boiling, stirring constantly. Remove from heat, add vanilla.
2. Slowly pour hot mixture over egg white, mixing well. Cover. Chill.
3. Whip cream. Alternate layers of tapioca and whipped cream in parfait glasses.
